Which Autodesk version should I buy — the newest or the one my university uses?

What exactly do I receive with an Office 365 account product?

You receive account sign-in credentials by email, not a product key. You sign in to Office with those details rather than entering a key anywhere. Because these are accounts rather than keys, they carry a 90-day replacement guarantee from the purchase date rather than the standard key warranty, and you should not change the recovery email or password unless the product page tells you to.

Can I store my dissertation in the cloud storage that comes with the account?

You can, but never as your only copy. Keep coursework, dissertations and project files backed up separately on a device or drive you control. Can I transfer the licence to a new laptop later?

It depends on the licence type. Retail keys can generally be moved to a replacement device after deactivating the old installation. OEM keys are permanently bound to the motherboard they first activate on, and bind keys are tied to the Microsoft account used at activation. What if my key does not activate?
